At the head of the kitchens of La Cabro d’Or since 2001, Michel Hulin never stops reinventing himself and developing his dishes around an authentic cuisine combining flavors and techniques, a true ode to the land of the PACA region.
Son of a fisherman, originally from Port-la-Nouvelle, Michel Hulin fell under the spell of the wild nature of the Alpilles. His Gourmandise menu is in itself a tribute to the surrounding nature, favoring local producers in order to highlight the terroir of the Alpilles and Provence.
Michel Hulin also expresses himself with a menu that evolves according to the seasons and local producers.
He proposes a cuisine inspired by the Alpilles, and takes care to respect the flavors of each product in search of the right balance. Passionate, he draws the vegetables and herbs of the season from Baumanière’s organic garden and selects each product from producers for their commitment, thus adhering to the spirit and values of Baumanière.
