Baumanière Les Baux de Provence

The Oustau de Baumanière boutique in Les Baux-de-Provence is a treasure chest of delicacies waiting to be discovered!

This cocoon of sweets is dedicated to exceptional chocolates and confectionery.

Opening hours:

Open from 9:30am to 1pm and from 2pm to 6pm.

Closed on Wednesdays and Thursdays.

Brandon Dehan, the Executive Pastry Chef at the Oustau de Baumanière, working alongside Chef de Cuisine Glenn Viel and supported by owners Jean-André and Geneviève Charial, has taken up the challenge of offering his vision of chocolate through his signature praline creations.

Together with head chocolatier Julien Despaquis, they have come up with some surprising sweets, “Les Cigales”, gourmet sweets made with herbs from the Alpilles region: basil, thyme, wild fennel, rosemary, lavender and savory.

In November 2022, after 5 months in business, the Baumanière chocolate factory received an Award of Excellence and a Tablette d’Or from the Club des Croqueurs de Chocolat. We are also very proud to be part of the “Coup de Coeur Français”.

           

Fou de Pâtisserie has also awarded our teams the 2022 “Chocolate Creation” Trophy.

 

With chocolate chef Justine Berger, they suggest gourmet tablets and pure-origin tablets (from Cuba, Sao Tomé, Ecuador and Vietnam), boxes of sweets and seasonal confectionery to delight the taste buds of connoisseurs and connoisseurs alike.

« Chocolate is a noble product, a material that I am particularly fond of, with so many possibilities to work with. There is a great deal of pleasure in this product and that is what drives me. Chocolate is also Jean-André Charial’s pet peeve, so I was keen to do this project with him and there was also the space and the desire for a new challenge. »

Located in the Oustau de Baumanière and communicating with the Boutique on the Place des Artisans, in a subtle alliance of authenticity and modernity, in the image of Baumanière, the “old-fashioned shop” style is arranged with elegance and design where we will find noble and natural materials such as wood, glass, metal, wood tones, terra cotta, blue.
